Gluten-Free, Meat-Free, but Dairy-Full!: I was very excited to see a gluten-free vegetarian cookbook. Since I have very much enjoyed some of Donna Klein's other books, I was particularly excited to see a gluten-free book from an excellent source. My one, rather major, disappointment is the extremely large percentage of recipes in the book that require dairy, very often as one of the main ingredients. I counted (roughly) 250 recipes in the book (including side bits for toppings, etc.) but only around 100 of them are either dairy-free or have a dairy-free option. Unfortunately, the sad truth is, people with Celiac Disease (an autoimmune disease caused by the consumption of gluten) are also extremely likely to have problems digesting dairy, too, given the damage to the digestive system caused by Celiac. This means that for many people like me who really need a gluten-free cookbook, a large number of the recipes are off limits, for health reasons. Although I haven't tried any recipes yet (the cookbook arrived today), I did want to provide some words of caution for people wanting to avoid dairy. Having said that, there are a lot of wonderful-sounding dishes in this book that I look forward to trying. Having collected various gluten-free cookbooks over the years, I can say that I found the range of offerings in this book to be impressive. Even the bread-type items did not appear to be overly complex (in preparation or in the number of ingredients) and there were many tasting-sounding items that were quite different from the usual gluten-free offerings.
