EASY-LOWFAT-DELICIOUS: This book focuses mainly on new ways to cook familiar vegetables - nothing too esoteric - yet nothing boring. The recipes are divided up by Appetizers, Soups & Stews, Main Dishes, Side Dishes and Salads. They are easy to read and follow, and the results are always great - I have never made a dish I didn't like. I cook at least one or two recipes from this book every week. All selections are low fat and relatively quick to make.
Vegetables, not vegetarian: I've often been disappointed by vegetarian cookbooks that focus on grains and beans. This book focuses instead on vegetables - just what I was looking for! I bought this book several years ago, and I still cook something from it about twice a week. As we learn to love more vegetables, we go back and are still finding "new favorites." I've always been impressed with this series - I find myself cooking up to 50% of the recipes in the book (as opposed to other cookbooks that sound great, but I only cook 2-3 things from the entire book). The pictures are mouth-watering, and all the ingredients used in the book are "real food" - no cream of mushroom soup or ranch dressing packets here!
