Amazon.com Review: These pretty little ramekins are a bit different in style than the traditional vertically rippled cups that look like miniature soufflé dishes. The tall, smooth sides are only interrupted by three horizontal ridges--it's a clean look, and actually makes them more practical. They're easier to grab from under the hot broiler and also easier to scrub clean after use--no more caramelized sugar trapped in the ripples! The smooth interior flares just slightly at the top to provide a broader surface area for that tasty top layer. Cute, Practical - Use them for this great recipe!: These are great for a wide variety of uses and in this great red color they are very cute too! Cute, practical and useful - how good can they get! They are perfect to use for this recipe: MOLTEN CHOCOLATE CAKES For best results, use a dark baking chocolate with high cocoa butter content (about 30 percent) 12 teaspoons plus 5 tablespoons sugar 8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped 3/4 cup (1 1/2 sticks) unsalted butter 3 large eggs 3 large egg yolks 1 tablespoon all purpose flour 1 quart purchased vanilla bean ice cream Generously butter eight 3/4-cup ramekin or custard dish. Sprinkle inside of each dish with 1 1/2 teaspoons sugar. Stir chocolate and butter in heavy medium saucepan over low heat until smooth. Remove from heat. Using electric mixer, beat eggs, egg yolks, and remaining 5 tablespoons sugar in large bowl until thick and pale yellow, about 8 minutes. Fold 1/3 of warm chocolate mixture into egg mixture, then fold in remaining chocolate. Fold in flour. Divide batter among ramekins or dishes. (Can be made 1 day ahead. Cover with plastic; chill. Bring to room temperature before continuing.) Preheat oven to 425F. Place ramekins/dishes on baking sheet. Bake cakes uncovered until edges are puffed and slightly cracked but center 1 inch of each moves slightly when dishes are shaken gently, about 13 minutes. Top each cake with scoop of vanilla bean ice cream and serve immediately. Makes 8 servings. Enjoy!
Individual Ramekins Hold Three Ounces: Le Creuset has redesigned their ramekin line so that there are now attractive ridges encircling the pots rather than the vertical ridges that are usually found on other ramekins. These horizontal ridges make the ramekins very easy-to-handle when placing them in the oven or when removing them. This three-ounce size is very small. Be sure to check your recipe in advance to see what size ramekin is needed. Many recipes vary in terms of size requirements. I have found this size is perfect for most desserts, such as crème brulée, flan, chocolate mousse, or a deep-dish fruit tart.
Absolutely Adorable Ramekins: I can't wait to find more recipes for these terrific ramekins! I was a little concerned at first that the may be too small; but, after trying the Molten Chocolate Cakes recipe, I am looking forward to using them again and again. If you are a chocolate lover, definitely try Mary Davis' recipe...they baked up beautifully; and, they had a perfect gooey center. The make-ahead feature is a winner. Easy to handle and to clean. I adore Le Creuset!!
Great ramekins: I have not been disappointed with Le Creuset yet. Use these over and over, in the oven or under the broiler for Creme Brulee - they always look new. Great!!!
Awesome for toddlers and adults.: Yes, these are beautiful for fancy desserts and individual casseroles and such. But folks in my stage of life will recognize them for their other legitimate use-- toddler food-holders. Their sturdy composition means I can reheat a bit of leftovers in the toaster oven (I'm a bit anti-microwave, but they work great there too). They're colorful, cute, and easy for little hands to grasp. My toddler's not a thrower, so I don't know if they'd stand up to repeated hurls, but they've been dropped before onto my wooden floors without any breakage. One thing I hadn't seen mentioned in the reviews is their ability to hold temperature. Hot things stay hot, and cool things stay cold, as long as the containers have been heated or cooled themselves. That's handy. My gal loves them and considers anything served in them to be HER food. ...but then, when she's in bed and we're entertaining adults, I can whip them out for some gorgeous cobblers, crisps, puddings or ice creams as well. I've served individual salsas and cheese dips in them at Mexican parties, and my husband and I often use them for portion control-- it's impossible to fit a dangerous amount of dessert in them. In other words, they're eminently useful for both our kiddo and adult worlds. Can't say that about the rest of "her" dishes!
