Top quality, beautiful copper crepe pan: I wanted a crepe pan that could handle some heat. No nonstick crepe pan can produce the kind of crepes I'm looking for. This pan, however, becomes practically nonstick after the first coat of butter after heating it up. It cleans up easily and is the best quality and most beautiful copper pan in my collection. I just cooked several courses of crepes: mushroom and brie, yogurt and banana, and nutella and banana. This pan cooks the crepe perfectly.
iron or bronze handle . . . to be or not to be - that is the ?: It is a little confusing that there is an iron handle and a bronze handle crepe pan being offered in that one is sold from Amazon for free shipping and one is sold by (the bronze) a third party, which means no free shipping. However, just a few weeks ago, i ordered the bronze one, which at the time was sold from Amazon w/ free shipping and it was the price of this iron one! Now the bronze one is cheaper and not sold directly by Amazon and the iron one is. Well, maybe it is just weird. 2/16/06 I was able to get it when Amazon had the 25 dollars off deal and by using a gift certificate. Anyway, i worked in restaurants as a cook and chef for 11 years, and i do not see any reason for one way or the other concerning the handle, as it is the base quality of the pan that is important. This is a top-of-the-line pan -- both versions actually. It is great to be able to cook a crepe using a stainless steel pan over using a nonstick, which will eventually crack/chip/peel after awhile. Moreover, there is much concern about the chemicals used in nonstick surfaces that may leach into the food and/or air. I do not trust them. As the other reviewer mentioned, it is important to use a potholder or a dishtowel -- my preference - a chef's main accessory next to a thermometer, as the pan's handle will get hot. The pan has a good feel about in weight and performance. If you are truly into making crepes as a hobby and art form, than this pan is well worth the money.
