very good: This machine not only looks good but it 'covers all the bases' it makes all types of bread. I wondered about sourdough but then there is a recipe in the book that mentions a 'poolish' which is dancing pretty close to making sourdough;alas I have not tried this recipe yet. So, on to the facts: It makes dough well, bread good, the 'beeps' are clear especially the the six space six beeps to remove the dough paddle. And YES this does not only just pause (to remove paddle) but it will shut off too, you just have to hold down the pause/stop button for 3 seconds. Press less than 3 seconds to pause only (it will resume aft. 15 minutes, or press start) I have found that I needed to read over the instruction and recipe book a few times in order to attempt 'mastering' the machines various cycles. Yes, I'd buy this again, and recommend it. This is my 5th bread machine, In 25+ years and it's the best one.
cuisinart waranty: I received the machine and during the first attempt to use it I could not get the pan to remain in place. It kept popping up and thereby disconnecting the paddle from the motor. I spent time on the phone with customer service at cuisinart trying to correct the problem. The customer service representative concluded that it was a defective machine and offered to replace it. However, I was required to pay shipping both ways which would have been about $20.00. That was about 20% of the purchase price. Thus, I decided to return the bread machine for a refund.
Great until you need parts.: Bakes a great loaf of bread, but at one to two loaves a week for a few months the pan wore out (the paddle would no longer turn). Try to order the part. Go ahead, I'll wait. The part number is CBK-PAN. You can't get one from the manufacturer or anyone else. If you do find one, I'll buy it for $89.
Breadmachine FAIL: I read many reviews before buying this. I had seen a few people who commented on having problems with the flour in the corners of the bread pan getting mixed in. I however had problems with the all of the flour getting mixed in. It was so bad the dough didn't even rise. I basically baked a bread brick. On my second try I decided to make the smallest loaf, thinking it would mix the dough better, but it was worse. I even read the troubleshooting guide but all of its suggestions were that the flour or yeast were old. Mine were just purchased for the bread machine. I ended up returning this machine after 2 failed loafs of bread. The lady at the store is herself an avid bread machine user and she wonders if maybe I just had a defective unit. They didn't have any more is stock to replace the one I returned, otherwise I may have considered trying a different untit before going to a different brand alltogether. From what I have read online though, I am thinking this machine would be better if it had double paddles due to the shape of the bread pan.
Bakes a brick ...: I received this bread maker as a gift for Christmas. I've had break makers in the past and I've worn them out so I know how to use the machine. I made 2 loaves in this machine and they both came out like bricks. Also, when removing the loaves after they had sat on warm for a bit, the outside housing of the Cuisinart was so hot I actually burned my hand when I touched the side of the bread maker. This one went back as it is either defective or this one just doesn't work. Also, there is a note in the instructions that you can stop the machine to take out the paddle before the bread bakes. I've never had a bread machine where I had to do this before so didn't think much of it. Both loaves that I baked, the paddle baked right into the bread without any hole to pull it out of. You have to destroy the bottom of the loaf to get the paddle out unless you happen to be lucky enough to catch it when the sound beeps and remove the paddle. A serious flaw in the way this machine makes bread. Do yourself a favor. Buy another model or brand. This one is not worth it.
