Perfect Chocolate Dipped Macaroon:
I've been on a gluten-free diet for 2 years, and one of the things I miss most is being able to visit a bakery and pick out sweets once in a while. Chocolate dipped macaroons are my favorite cookie, and I was delighted that a friend thought to send me these from Chatilas. They were perfect macaroons, slightly moist on the inside, crispy on the outside, with a lovely dark chocolate coating. I couldn't ask for more, except to have more! They're wonderful. Another thing I like is that they're made with Splenda, rather than NutraSweet. These cookies would be safe for a gluten intolerant person with diabetes, but they're delicious for anyone who appreciates a perfect macaroon.
